Instructions for Blue Oyster Mushroom Tacos with Lime Crema
Preheat a skillet over medium heat. Add olive oil and heat until shimmering.
Toss the Blue Oyster mushrooms with smoked paprika, cumin, chili powder, garlic powder, salt, and pepper.
Add the mushrooms to the skillet and cook for 5-7 minutes until they are slightly crispy and golden brown. Stir occasionally to ensure even cooking.
In a small bowl, mix the sour cream (or vegan yogurt), lime juice, cilantro, and a pinch of salt to make the lime crema.
Warm the tortillas in a dry skillet or microwave.
Assemble the tacos by layering the cooked mushrooms, shredded cabbage, diced tomatoes, and avocado slices on each tortilla. Drizzle with lime crema.
Serve immediately and enjoy!
Cooking Tips and Tricks
Maximize Crispiness: Spread the mushrooms out in a single layer in the skillet to avoid steaming.
Make Ahead: The lime crema can be prepared up to a day in advance and stored in the refrigerator.
Tortilla Warmth: For the best flavor, lightly char the tortillas over an open flame or in a hot dry skillet.
Customize Your Tacos: Add pickled onions, jalapeños, or hot sauce for extra flavor and heat.
Serving Suggestions
Pair with Mexican-style rice, refried beans, or a light citrus salad.
Serve with a refreshing drink like lime agua fresca or sparkling water with mint.
Storage and Freezing Tips
Refrigerator: Store leftover mushroom filling in an airtight container for up to 3 days. Reheat in a skillet to maintain texture.
